Piedmont is also known as the "Land of Water," with its abundant lakes, rivers and rice fields where carps were once raised, which explains the use of "Carpione" in the kitchens of Piedmont, that is, fried fish marinated in vinegar with aromatic herbs, one of the typical appetizer dishes of Piedmont. There has been great development and evolution in the acquaculture of Piedmont, thanks to the relevant safeguarding and valorization of the fresh water fish industry, from the Golden Hump Tench of Poirino to the Smoked Salmon Trout.
