The beautiful Rocca di Cavour, symbol of the municipalities of the territory, is where we will start our journey that will take us from Cavour to Bagnolo Piemonte. It is an isolated plateau that forms a type of spur, which is very interesting for its geological and naturalistic aspects. Cavour is undoubtedly an agricultural city, specializing in fruits, vegetables and livestock; it hosts a popular annual apple exhibition called Tuttomele which promotes numerous cultivated varieties many of which are typical agri-food products like the grey pippin apple variety of Piedmont. But Cavour is also a city rich in art and history as confirmed by the Benedictine Abbey of St. Mary founded in 1037. After leaving Cavour we proceed to Barge, county seat of the Infernotto Valley at the foot of Montebracco, where there are two castles: Castello Superiore built by the Acaja in the 14th century and the Castello Inferiore found in the centre of the town. A tour of the historic heart of Barge is an opportunity to sample the delicious Paste di Meliga accompanied by a glass of cold Quagliano from the nearby Saluzzesi Hills. Like Bagnolo Piemonte, the town we will visit next, , Barge's economy is closely linked to the processing of the prized pietra di Luserna (Luserna stone).
