The DOCG Canelli is the denomination with which it was intended to celebrate the historical characteristics of the white Moscato vine (once called Moscato di Canelli), which in its cultivation and winemaking, since 1800, has had intimate relations with the hills of the Canelli area and Santo Stefano Belbo. The tertiary origin of the soils in the production area, of a marine sedimentary nature with the presence of whitish, stratified, calcareous marls which are difficult to work and not very fertile for growing cereals, allows for the right vigor of the vine and enhances the synthesis, in the pre-harvest period, of the characteristic aromatic compounds (terpenols) of Moscato. The resulting wine is an aromatic, sweet wine, with a slight overpressure and a low alcohol content. Canelli Docg in the Riserva type will be placed on the market no earlier than 30 months of aging and refinement.

How it is made
The grapes must be exclusively harvested by hand.
Bottling must take place in the winemaking and aging area, to keep the characteristics and qualities of the product unaltered.
History
In the Canelli area, generations of producers have developed a series of peculiar techniques for producing Moscato Bianco-based wine since the end of the 19th century. In particular, the consolidated winemaking technique with arrest of fermentation through the use of cold and other physical measures have allowed the containment of the actual alcoholic strength, the maintenance of the residual sugar component, the liveliness and the fine foam and the preservation of the peculiar aromas of the white Moscato grape typical of the Canelli area.
