The Krumiri are shortbread biscuits which have a particular coarse milled surface. They are slightly bent like an arc, with a vaguely cylindrical form and weight from 10-12 g . The ingredients are flour, butter, sugar, fresh eggs and vanilla. The eggs soften the dough which absolutely must not contain water. The Krumiri do not contain colorants or preservatives. Produced all year round.

The production of Krumiri takes place in Casale Monferrato in the Province of Alessandria.
How it is made
The eggs are mixed with the other ingredients in the dough, and when the right consistency is reached, it is divided into bread mounds and left to rest for the whole day. The only utensil used by the baker is the extruder (recipient in the form of a syringe). The dough is put in this device, and when pressed, ejects the Krumiri biscuits with the characteristic ridged handlebar.
The rows of ridged biscuits are placed on thin planks, separated with a cutter and bent to a handlebar shape and placed on the trays. They are baked in an electric oven at a temperature of 300°C for 12 minutes. Once out of the oven the Krumiri are left to rest and cool down for the night.
History
The Krumiri were created in Casale Monferrato by Domenico Rossi in 1878.
It seems that one evening, Rossi invited some friends to his laboratory kitchen to taste the new creation. Given the goodness and novelty of the cookie, the name chosen would be that of a very popular liqueur of that time: the "Krumiro."
The unique curved shape of these cookies was Rossi's homage to King Victor Emmanuel II, who had a "handlebar moustache."
The Krumiri of Domenico Rossi rapidly became popular and because of its quality and the entrepreneurial talent of its creator, it won numerous accolades and success. Between 1886 and 1891, Rossi received the certificates for "Supplier to the House of his Highness the Duke of Aosta, the Duke of Genoa and Supplier to the Royal House of Umberto I."
