How it is made
The flat tomato plants of the 'Piatta di Bernezzo' variety are semi/highly luxuriant and have a foliage with high production of lateral leaves, The floral structures have large primary flowers that as a rule are pulled out to avoid the formation of deformed berries. The cultivation method consists in the sowing in winter, with succeeding re-picketing in cubes of peat in greenhouses and transplanting under tunnels in spring. The harvesting starts in June and proceeds in steps. The seed is produced in the farmstead, through the selection of plants that produce the berries that comply most to the varietal standards.
History
This variety derives from the selection of the flat variety of Milan and/or Cambiano, particularly diffused in Piedmont and Cuneo in the early 1960s. The first cultivations were in the areas of Bernezzo, where environmental conditions have enhanced some of its characteristic flavours; it spread to the entire area of the foothills of Cuneo.
