VAL D'OSSOLA BRESAOLA (AIR-CURED BEEF)
The Bresaola of Val d'Ossola is a salted, cured product, obtained with hindquarter cuts of the calf, especially the thigh (tip of the hip).
The salted meat is prepared with spices and natural cinnamon aromas, cloves, garlic, rosemary, laurel, and juniper if desired. The whole piece varies according to the cut of the meat processed. When sliced, the meat is compact, consistent and of an intense red with scarce infliltration of fat. It is gently fragrant and tasty.
